French-Fried Shrimp Recipe
2 lb Medium or large fresh shrimp
1 cup of All-purpose flour
1/2 teaspoon of Sugar
1/2 teaspoon of Salt
1 Egg; slightly beaten
1 cup of Cold water
2 tb Vegetable oil
Hot vegetable oil
DIRECTIONS:
Peel shrimp, leaving the last section of shell and tail intact. Butterfly
shrimp by cutting along outside curve almost through; remove vein. flatten
shrimp and set aside. Combine flour, sugar, salt, egg, water , and 2
tablespoons oil; beat until smooth. Dip shrimp into batter, and fry in deep
hot oil until golden. Yield: 4 to 6 servings

Mr. Food's Shortcut A La King Recipe
1 cup of Regular or low-fat
- sour cream
1/4 teaspoon of Salt
1/4 teaspoon of Black pepper
16 oz Frozen mixed vegetables
1/2 lb Deli chicken or turkey
- breast, cubed
10 1/2 oz Condensed cream of
- chicken soup

Chili Lima Beans With Fresh Dill Recipe

1/4 cup of Large dried lima beans
1/2 tb Light vegetable oil
1/4 teaspoon of Cumin seeds
1/2 cup of Chopped onion
2 Garlic cloves, peeled,
-crushed
1 Half-inch piece fresh
-ginger, peeled
1/2 cup of Peeled, chopped tomato
2 tb Flaked coconut
2 tb Chopped fresh cilantro
2 1/2 cup of Water
1/4 teaspoon of Cayenne pepper
1/2 teaspoon of Paprika
1/2 teaspoon of Salt, or to taste
1 tb Chopped fresh dill
DIRECTIONS:
Dalnas are the ingenious creations of cooks from Orissa, in eastern
India. Traditionally, the dish is prepared with yellow mung beans,
but I have created this recipe using readily obtainable large lima
beans. To round out the menu, accompany this robust stew with rice
pilaf
Rinse lima beans. Soak in water to cover for 6 hours, or overnight.
Drain and rinse again. Set aside
Heat oil in a small heavy skillet over medium-high heat. Add cumin,
onion, garlic and ginger. Stir and cook until onion starts to brown,
about 4 minutes. Add tomato, coconut and cilantro, reduce heat and
cook until tomato is soft. Transfer to a blender, add 1/4 cup of the
water and blend until smooth. (If necessary, add more water to
facilitate blending.)
DIRECTIONS:
Combine beans, tomato-onion mixture and remaining water in a heavy 2
quart saucepan. Bring to a boil, reduce heat to medium, cover, and
cook until beans are tender, but still hold their shape, about 1
hour. Add cayenne, paprika and salt. Mix thoroughly. Garnish with
fresh dill
PER SERVING: 55 calories, 2 g protein, 7 g carbohydrate, 2 g fat (1 g
saturated), 0 mg cholesterol, 181 mg sodium, 3 g fiber

Lebanese Baba Ghanoush Recipe
1 lg Eggplant, unpeeled, about 1
-lb.
1 lg Clove garlic, opeeled and
-crushed
2 tb Tahini (sesame paste)
1/2 Lemon, juice of, or to taste

DIRECTIONS:
-GARNISHES-

Pita bread, cut into wedges

DIRECTIONS:
Using a fork, poke the eggplant at least a dozen times. Place on a baking
sheet and broil on all sides, about 4 - 5 inches from the source of heat.
Turn often until the eggplant is browned nicely all over. Total time will
be about 45 minutes
Remove the eggplant from the broiler and allow to cool for a few minutes.
Cut the eggplant in half lengthwise and scoop out soft insides, discarding
the brown ed peel. In a bowl, mash the eggplant and the remaining
ingredients, except the garnishes, with a fork. Do not use food processor
or blender, as you do not wanbt too smoth a paste.Serve on a plate with the
olive oil and parsley sprinkled over the top. Guests dip the bread wedges
into the Baba Ghanoush and go directly to heaven without passing go
serves 4 - 6 as an appetizer

DIRECTIONS:
1. Parboil noodles as in "Parboiled Noodles #1/#2"; then toss in oil.
Refrigerate to chill (2 hours or more)
2. Shred roast pork. Blanch bean sprouts. Shred cucumbers and radishes
3. Place the chilled noodles in individual bowls and the other ingredients
in separate serving dishes. To eat: the diner spoons 1 to 2 tablespoons, at
a time, of the meat and vegetables over his noodles and mixes them all
together. (If he wishes, he may toss the vegetables first in a dip dish of
vinegar.)

Combine 1 tablespoon cornstarch, 1 teaspoon sugar and 1/2 cup soy sauce and
cook, stirring, over medium heat until the mixture thickens and is smooth.
(The diner spoons some of the sauce over his noodles, then tops them with
about 1 tablespoon of each vegetable, tossed first in vinegar.)

5. Place the chilled noodles in a large serving bowl. Top with 1 cup cooked
pork and 1/2 cup ham, both shredded; 1/2 cup shrimp; 1 cucumber, peeled and
shredded; and egg threads, made with 2 eggs. In a second bowl, serve the
following sauce which has first been heated: 2 cups stock, 2 tablespoons
soy sauce, 1 tablespoon peanut butter, 2 teaspoons vinegar, 1/2 teaspoon
salt, and a few drops each of Tabasco Sauce and sesame oil. (The diner
transfers some of the noodles and their topping to his own bowl and then
spoons some of the sauce over.)

Rolled-Oat Macaroons Recipe
2 1/2 tb Melted butter

6 oz Elbow macaroni

Chicken With Garlic Recipe
2 Chickens or chicken breasts
2 sm Heads garlic
Water
1/4 cup of Chopped Italian parsley
Salt and pepper
2 tb Unsalted butter
1 lg Lemon; juiced
DIRECTIONS:
If using whole chickens, halve chickens and bone completely except
for wing joint. If only using breasts, bone completely. Place the
heads of garlic in water to cover in a small saucepan and bring to a
boil. Drain. Peel the garlic and cut each clove into paper-thin
slices. Toss in a bowl with the parsley, and season to taste with
salt and pepper. Loosen the chicken skin and stuff about 2 teaspoons
garlic mixture between the skin and the meat. Reserve remaining
garlic mixture. Set chicken aside. Prepare hot coals in a grill.
When the coals are ready, grill the chicken 5 to 7 minutes on each
side, or until the flesh is no longer pink. Do not overcook the
chicken or it will become dry. Heat the butter in a skillet, add the
reserved garlic mixture, and saute a few seconds. Add the lemon juice
and adjust seasonings. Heat through. Place the chicken on a large
heated platter and spoon the garlic sauce over it.

Persillade Recipe
3 tb Shallots; finely chopped
1 lg Garlic clove
peeled and finely chopped
1 1/2 cup of Fresh breadcrumbs
1/2 cup of Fresh parsley; fine chopped
Salt and pepper; to taste
DIRECTIONS:
This mixture makes a nice crispy coating for chicken, roast lamb, or
baked fish
Combine all ingredients, tossing well. Pat onto chicken (whole or
pieces), lamb or fish during last 20 to 30 minutes of cooking time to
crisp crumbs. Do not baste, or crumbs will become soft

Brigitte's Shrimp Or Tuna Mousse Recipe
2 tb Mayonnaisse
1/2 cup of Water
1 cn Tomato soup
1 pk 8 oz cream cheese
1 teaspoon of Paprika
1 lb Shrimp or 2 sm cns tuna
1/4 cup of Peppers, finely chopped
1/2 cup of Celery, finely chopped
1 tb Onion, grated
1 teaspoon of Worchestershire Sauce
1/4 teaspoon of Salt
1 pk Unflavored gelatin in
Water as directed
DIRECTIONS:
Soak gelatin in water. Heat undiluted sop; add gelatin and stir well
until dissolved. Mash cream cheese; add to soup and continue to heat
until cheese is dissolved. Cool. Fold in mayonaisse, shrimp or tuna,
and vegetables and seasonings. Mix well and put into a well-oiled

Polish Butter Cookies Recipe
1 cup of Unsalted Butter At Room
Temperature
1/2 cup of (Scant)
2 lg Hard-Cooked Egg Yolks
Pressed Thru' Sieve
1 lg Egg Yolk Lightly Beaten
1 teaspoon of Almond Extract
1 teaspoon of Vanilla Extract
2 cup of All-Purpose Flour

DIRECTIONS:
1. Using an electric mixer, cream together the butter and sugar in a
mixing bowl until light and fluffy. Beat in the cooked and raw egg
yolks and both extracts. Using a wooden spoon, gradually incorporate
the flour to make a smooth, somewhat stiff dough. Wrap dough in
plastic wrap and refrigerate 2 hours. 2. Preheat the oven to 350 F.
3. Roll out the dough 2/3 inch thick on a lightly floured surface.
(The cookies are supposed to be plump.) Cut into shapes with small 1
to 1 1/2-inch cookie cutters - hearts and stars work nicely. Gather
up the scraps, reroll, and cut out more cookies. Place 1/2 inch apart
on ungreased baking sheets. 4. Bake cookies until they just begin to
take on the slightest tinge of color, about 10 mins. Cool on wire
racks and store in an airtight container up to 1 week. Makes about 6
dozen small cookies

4 Squares yeast cake; crumbled
1/2 cup of Warm water
1 tb Sugar

Carrot Candies Recipe
1 3/4 cup of Sugar
3 tb -Water
1 lb Carrots; scraped and grated
1 teaspoon of Ginger
1/2 cup of Walnuts, finely chopped
2 tb Lemon juice
DIRECTIONS:
Dissolve the sugar in the water in a saucepan over low heat. Stir in the
carrots, then bring to a boil. Boil for 30 minutes or until mixture is
very thick. Remove from heat and stir in the giner, walnuts and the lemon
juice. Pour into a greased square pan (possibly 9 inch?)Allow to cool and
then cut into squares. When completely cool, remove from pan

Grilled Tomatoes And Green Onions Recipe

1/3 cup of Olive oil
1 tb Fresh lemon juice or wine
Vinegar
2 tb Fresh basil; chopped
1 tb Shallots; chopped
1/2 teaspoon of Salt
1/4 teaspoon of Freshly ground pepper
3 lg Tomatoes; cut into slices

10 To 12 green onions; trimmed

DIRECTIONS:
Firm tomatoes, even those that are slightly green, should be used for this
recipe. They are less juice and hold their shape better when grilled than
fully ripe ones. Fresh basil is wonderful with tomatoes, but you could also
use chopped tarragon or even parsley in the basting sauce. Serve warm or at
room temperature, with grilled lamb or fish
Prepare a fire in a grill. Position the oiled grill rack 4-6 inches above
the fire
In a small bowl stir together the oil, lemon juice or vinegar, chopped
basil, shallots, salt and pepper
Arrange the tomatoes and onions on the rack. Grill, turning them two or
three times and brushing with the oil mixture, about 5 minutes. If the
onions are large, they might take 1 or 2 minutes longer
Transfer the tomatoes and onions to a platter and garnish with basil or

Heat a wok or skillet and saute the meat mixture until cooked to 'rare'. Do
not overcook or singe the meat. Remove the grease from the meat mixture by
straining in a colander, then return to the hot wok or skillet and reheat.
Add sherry and reduce. Add this to the sauce in the pot. Simmer this
mixture on the lowest possible heat for 6 or 7 hours. Stir occasionally.

Carrot Cookies Recipe
1 Egg
1/2 cup of Brown sugar
1/2 cup of Sugar
1/4 cup of Oil
1 teaspoon of Vanilla
3/4 cup of Carrot; shredded (1 large)
1 cup of Flour
1 cup of Oats; quick cooking
1 teaspoon of Baking powder
1 teaspoon of Cinnamon

1/4 teaspoon of Salt
1 cup of Raisins
DIRECTIONS:
Preheat the oven to 375 and spray 2 baking sheets with Pam. Beat the egg,
sugars, oil and vanilla with an electric mixer until smooth. Add the
shredded carrot and beat again. Add the flour, oats, baking powder,
cinnamon, nutmeg and salt and beat until well mixed. Add the raisins and
stir to combine. Drop the batter by round tsp about 2" apart onto the
baking sheets and bake for 10 to 12 minutes or until the cookies are
lightly browned. Cool on wire rack. Per cookie: 48 calories and 1.3 grams

Chippewa Bannock Recipe
1 1/2 cups cornmeal 1/2 cup water 4 tbls. hazelnut oil, melted
butter or bacon drippings 4 tbls. maple syrup or honey 1/2 tsp. salt
3 to 4 tbls.cooking oil for frying
DIRECTIONS:
In a mixing bowl, combine cornmeal, water, hazelnut oil, syrup and
salt. In a large skillet, heat 2 tbls. oil over medium-high heat.
Drop batter by tablespoonfuls into hot oil. Flatten with spatula and
fry cakes until crisp and browned on both sides. Add more oil as

Amaretto-Amaretti Chocolate Cheesecake Recipe
This is adapted from Maida Heatter's Book of Great Chocolate Desserts,
(Knopf 1980). It won me a blue ribbon at the Martha's Vineyard
Agricultural Exhibition and Fair in 1983. If you ever find yourself
in front of a firing squad, this makes an unbeatable last request
INGREDIENTS (Serves 16)
DIRECTIONS:
CRUST
7 oz Amaretti (see note)
2 Tbsp granulated sugar 1 oz unsweetened chocolate (1 square)
5 Tbsp sweet butter
DIRECTIONS:
FILLING
6 oz semisweet chocolate
7 oz Amaretti
4 oz almond paste
1/3 cup Amaretto liqueur 1 1/2 lb cream cheese at room
temperature
1/4 cup granulated sugar
4 eggs (large or extra-large)
1/2 cup heavy cream
DIRECTIONS:
PROCEDURE (CRUST)
DIRECTIONS:
Butter the sides only (not the bottom) of a 9-inch spring-form pan (2
1/2-3 inches deep). Grind the Amaretti very fine in a food processor
or blender. Mix with sugar in a mixing bowl.elt the chocolate and butter in the top of a double boiler, stirring
occasionally. Add the melted mixture to the Amaretti crumbs and sugar
and mix thoroughly. (Don't wash the double boiler; you'll be using it
again in a minute.)
DIRECTIONS:
Turn the mixture into the prepared pan. With your fingers, distribute
it evenly over the bottom and press it down into a very firm, compact
layer. Refrigerate while you prepare the filling
PROCEDURE (FILLING)
DIRECTIONS:
Adjust rack 1/3 up from the bottom of the oven and preheat to 350
deg. F. Partially melt chocolate in the top of a double boiler, then
uncover and stir until completely melted. Remove the top of the
double boiler and set aside to cool. Break the Amaretti coarsely into
a bowl and set aside
Cut the almond paste into small pieces, and beat on low speed with an
electric mixer, while gradually adding the Amaretto liqueur. Beat
until thoroughly mixed, and set aside
Beat the cream cheese with an electric mixer until smooth. Add the
sugar and beat until smooth again. Add the almond paste-Amaretto
mixture and beat until thoroughly mixed. Add the melted chocolate and
beat well again. Add the eggs one at a time, beating at low speed
until they are incorporated after each addition. Add the heavy cream
and beat until smooth. Add the coarsely broken Amaretti and stir
gently only to mix
Turn into the prepared pan, pouring the mixture over the bottom crust.
Rotate the pan gently to level the batter. (Don't worry if the mixture
comes almost to the top; it won't run over.)
DIRECTIONS:
Bake 45 minutes. It will seem soft and not done, but don't bake any
more; it will become firm when chilled. The top of the cake is
supposed to look bumpy because of the large chunks of Amaretti
Let cool completely at room temperature, then carefully remove the
sides of the pan and refrigerate the cake (still on the bottom of the
pan) for 4 to 6 hours, or overnight
NOTES Amaretti are Italian almond-flavored wafer cookies. They are
usually sold in metal tins with the wafers wrapped in packages of two
inside the tin. You can also buy Amarettini, which are the same
flavor but much smaller and not individually wrapped. Since you're
going to grind some of the wafers and break the others into chunks,
it doesn't matter which size you start with. One brand is Amaretti di
Saronna, Lazzaroni & Co. This is an expensive cake, both in terms of
the cost of the ingredients ($15-$20) and the number of calories

1 pt Whipping cream
1 tb Gelatin powder
3 oz Amaretto liqueur

3 tb Confectioners sugar
Vanilla extract, to taste

DIRECTIONS:
1. Whip the fresh, heavy cream. Place in the refrigerator until ready
to use. 2. Dissolve the gelatin powder in Amaretto in a double

confectioners sugar in a separate double boiler. Heat on low
temperature until warm while whisking constantly. 4. Remove the egg
and sugar mixture from heat and mix at high speed until consistency
reaches firm peaks. 5. Fold the gelatin mixture into the eggs. 6.
Fold in the whipped cream and add vanilla and almond extract to
taste. 7. Fill dessert glasses and place in the refrigerator until
firm (approximately 1 hour). 8. Garnish with sliced, toasted almonds.
This mousse is a very light dessert. It is good to serve after a meal
of many courses.

Roasted Pumpkin Seeds Recipe
1 Pumpkin
2 tb Vegetable oil
Salt to taste
DIRECTIONS:
Scoop out the seeds and pulp from a pumpkin, and separate the pulp
from the seeds, discarding the pulp
Rinse the seeds in a large colander under cold running water,
removing any remaining clinging strings. Seeds will feel slippery to
the touch under the water
Dump seeds, a small amount at a time, into paper toweling and dry.
Spread onto a large baking sheet and allow to finish air-drying for
an hour or so. When seeds are dry, toss them with the vegetable oil
to coat well and sprinkle liberally with salt. Spread into a thin
layer on the baking sheet and place in a 350 F oven for 30 minutes,
or until golden brown, stirring every few minutes to prevent burning
Remove from the oven and allow to cool before serving
(These little suckers taste so good that roasted seeds rarely are
allowed to cool much beyond just cool enough to touch before they get
scarfed.)

Collectors' Camembert Pie-Crust Recipe
1/3 cup of Milk
2 tb Butter
2 teaspoon of Sugar
2 1/2 teaspoon of Dry yeast

DIRECTIONS:
Heat the milk, butter and sugar until the butter is melted. Remove from the
heat and set aside to cool slightly.(105-115 degrees) Stir in the yeast
into the mixture and let it stand for 10 mins. Stir in the salt, egg and
oil. Add the flour 1/4 cup at a time, stirring well until each addition is
throughly incorporated and the dough hold together well. Turn out onto a
lightly floured board and knead for 10 mins. adding more flour if
necessary, until the dough is smooth and satiny
Place the dough in an oiled bowl and turn to oil the top. Cover the bowl
and set aside to rise at room temperature until triple in bulk (about 2
hours). Punch the dough down and roll it into a rectangle approximately
9"x13". Place in a jumbo size zippered bag. Refrigerate for up to 6 hours.
When you begin to prpare the filling remove the bag from the refrigerator.

Pam Prichard's Original Hot Dog Chili Recipe
1 1/2 lb Hamburger meat
1/4 cup of Water *
1/4 cup of Chopped onion **
8 oz Tomato Sauce
3 oz Tomato Paste (1/2 small

2 teaspoon of Chili Powder
1 Clove Garlic chopped ***

DIRECTIONS:
Brown meat in a 2 quart sauce pan. Drain to remove fat. Stir in water,
onion, sauce, and tomato paste. Add remaining seasonings. Cover and cook
one hour, stirring occasionally. Taste and adjust seasonings as required.
Remove cover and cook as required to thicken to desired consistency, up to
another hour. CAUTION: Chili will burn easily when thickening, use as low
heat as possible, but enough to boil

DIRECTIONS:
1. On the day before, cook and peel and grate the potatoes. Mix in the
flour, cream of wheat, eggs butter, salt and nutmeg. Knead well and
roll out on a well floured board, about 1 cm thick and cut into 3 x 3
inch squares. Wash the apricots and remove the stones. Put a cube of
sugar in place of the stone, put the apricot back together and place
in the middle of the square. Fold the dough over and with
well-floured hands knead it into a dumpling. 2. Finish all squares
the same way. Bring a pot of water to a boil (with a pinch of salt)
and slide in the dumplings and let them simmer (don't let them get
stuck on the bottom) for about 6-8 minutes. Shake the pot gently so
they don't get stuck. They are done when they drop to the bottom.
Serve them hot ripped open at once with cinnamon sugar on top.

Miss Ruth's Karo Caramels Recipe
2 cup of Sugar
1 3/4 cup of Light Karo syrup
1/2 cup of Butter
2 cup of Whipping cream
1 cup of Chopped pecans; toasted
DIRECTIONS:
In a medium-sized saucepan, combine sugar, syrup, butter and 1 cup of
cream. Bring to a boil. While boiling, add second cup of cream. Cook to
soft ball stage. Beat by hand for 3 minutes. Add pecans. Pour onto a
buttered platter. Cut when cool. Yield: 2-1/2 pounds

1 cup of Long grain rice,washed and

1 1/2 teaspoon of Salt

3/4 cup of Currants
1/4 cup of Pine nuts
2 cup of Water
DIRECTIONS:
Prepare mussels and set aside. Saute onions in olive oil until soft.
Add rice and mix thoroughly. Add salt, pepper, spices, currants and
pine nuts. Mix well. Add water, bring to a boil and cook for 10
minutes at medium heat. Add cleaned mussels, removed from their
shells, mix thoroughly and cook about 10 minutes. Serve at room
temperatur, mounded in a dish surrounded by fresh lemon slices. This
may be used as an appetizer or as a side dish.

Prune Chocolate Cup Cakes Recipe

DIRECTIONS:
Pit prunes and cut in pieces. Beat eggs until thick and creamy. Add
to cream, and sugar. Mix well. Sift flour, measure, and sift with
baking powder and salt. Add grated chocolate. Beat thoroughly. Add
prunes and flavoring. Mix well. Pour into well-oiled muffin tins.
Bake in moderate oven (375 F) about 15 minutes. If desired, use 2
teaspoons baking powder and 1/2 teaspoon baking soda with 1 1/4 cups

1/2 cup of Cheddar Cheese; shredded

DIRECTIONS:
Combine first 5 ingred. in a lg. bowl; make a well in center of
mixture. Combine eggs, and milk; add to sausage mixture, stirring
just until moistened. Spoon into greased miniature muffin pans,
filling 3/4 full. Bake at 350 for 35-40 min. Remove from pan
immediately. Makes 2 dozen.

Batter Crisp Onion Rings Recipe
3 lg Sweet onions, sliced 1/4"
And
Separated into rings
1 1/2 teaspoon of Baking powder
1 cup of Flour
1/2 teaspoon of Salt
1 Egg
2/3 cup of Water
1/2 tb Lemon juice
1 tb Melted butter
Oil for frying
DIRECTIONS:
Soak the onion rings in ice water for at least 1/2 hour. Pat the onion
rings dry with paper towels. Sift together the baking powder, flour
and salt. Combine the egg, water, and lemon juice and beat until
frothy. Stir this into the dry ingredients just until blended. Add
butter. Dip onion rings into batter, a few at a time. Drop into 375
deg. F. oil. Fry 2 minutes on each side, turning once. Drain on
absorbent paper. Keep hot in slow oven (325 deg. F.) until all are
cooked. Don't crowd them in the fryer

Pigeon Forge Pintos Recipe
2 lb Pinto beans
2 qt Water
1/2 lb Salt pork
2 teaspoon of Salt
1 cup of Molasses
1 teaspoon of Dry mustard
2 tb Brown sugar
DIRECTIONS:
Wash beans,discarding imperfect ones. Cover with water; bring to the
boiling point, boil 2 minutes, then soak 1 hour or more. Without
draining, cook slowly until the skins burstwhen you take of few on a
spoon and blow on them. lDrain, reserving the cooking water. cover
salt pork with boiling water. Let stand 2 minutes, drain, and cut
1-inch gashes every 1/2 inch without cutting through the rind. Put
the beans in the bean pot. Push the pork down into the beans until
all but the rind is covered. Mix remaining ingredients. Add 1 cup of
the reserved water and bring to the boiling point. Pour over the
beans and add enough more water to cover the beans. Cover the bean
pot. Bake 6 to 8 hours at 250F. Add water as needed to keep the beans
moist. Uncover the last hour of baking so that the rind will be brown
and crisp

Curried Shrimp 2 Recipe
2 Onions, chopped
3 Garlic cloves, minced
3 tb Vegetable oil
2 tb Curry powder
2 lb Raw, peeled shrimp
Salt & pepper to taste
1 Teasp hot pepper sauce
1 lg Tomato, chopped
2 tb Butter
2 Teasp lemon juice
DIRECTIONS:
Saute onions and garlic in oil until tender, add curry powder, stirring for
about 2 minutes
Add shrimp. salt and pepper, hot pepper and tomato. Cook, uncovered, until
shrimp is firm and pink, about 15 minutes. Add butter and lemon juice. Mix
well
Serve with hot, boiled rice or roti
Serves 4-6

Chicken With Goat Cheese Recipe
4 oz Goat cheese
4 x Boneless, skinless chicken
-breasts, pounded to 1/4"
1 tb Chopped fresh basil leaves-
-OR 1 tsp dried basil leaves
1/2 teaspoon of Chopped fresh thyme leaves-
-OR 1/8 tsp dried leaves
1 tb Minced sun-dried tomatoes,
-soaked in hot water,drained
1 teaspoon of Olive oil
1 x Egg white, beaten
1/2 cup of Cracker crumbs seasoned with
-1/2 tsp dried basil,crushed
1 1/4 cup of Roasted Red Pepper Wine
-Sauce
Nonstick olive oil cooking
-spray
Fresh basil leaves OR pars-
-ley for garnish
DIRECTIONS:
In medium bowl combine cheese, basil, thyme, tomatoes and olive oil.
Divide into four equal portions and form into small logs. Place
cheese log on each flattened chicken breast and roll chicken around
cheese. Dip each roll in egg white and roll in seasoned crumbs. Place
seam-side down in baking dish with lid; cover. Bake in preheated 350F
oven 20 minutes. Uncover and spray chicken with olive oil flavored
nonstick cooking spray. Increase oven temperature to 450F and bake
additional 10 minutes. To serve: Cut each chicken breast into four
slices and spoon Roasted Red Pepper Wine Sauce over top. Garnish with
basil or parsley.

1 oz Celery
1 x Pinch dill weed

4 each Egg yolks
1 x Seasoning
2 oz Herring roe
DIRECTIONS:
Finely mince mussels, vegetables and herring roe. Add herbs, seasoning and
breadcrumbs. Blend well with egg yolks, brandy and cream.
Cook for 1/2 hour at 350F in a Sainmarie in the oven.
Cook and serve with toast fingers.
